S'Mores
#1
August 10th is considered to be S'Mores day! Here is my recipe that is so loved by family. I hope you enjoy it too! :)
Baked S'mores
You can use a mix of cookie crumbs (such as shortbreads) and graham crackers. The recipe can be scaled down and made in a 9-by-9-inch or 11-by-7-inch baking dish.
Nonstick cooking spray
3 cups graham cracker crumbs
1/2cup (1 stick) melted unsalted butter
1/3cup sugar
1 bag (16 oz.) mini marshmallows
12 oz. chocolate of choice, either 6 to 8 chocolate bars (1.55 oz. each), broken up, or chocolate chips
Preheat the oven to 350 degrees. Coat a 10-by-15-inch baking sheet with nonstick spray.
In a medium bowl, mix together the cracker crumbs, melted butter and sugar. The mixture should come together when pressed with your fingers. Pat the mixture evenly into the bottom of the prepared baking sheet. If needed, place plastic wrap over the top and use a round object to roll and press evenly.
Bake for 15 minutes or until set. Remove from oven and sprinkle the marshmallows over the crust and top with chocolate pieces. Return to the oven and bake 5 to 8 minutes or until the marshmallows and chocolate melt. Remove from the oven and cool. Once cool, use a pizza cutter lightly coated with oil to cut into desired size squares. Makes: 35 to 40 squares.
Nutrients per serving: 147 calories (43 percent from fat), 7 g fat (3 g sat. fat), 22 g carbohydrates, 1 g protein, 48 mg sodium, 6 mg cholesterol, 1 g fiber.

I wouldn't say they stay gooey but they do stay soft if you cover the container once they have somewhat cooled. I have found that these are so yummy right out of the oven even though they are extremely hot!! Also, I have also use Reese's Peanut Butter Cups instead of the chocolate chips and they are scrumptous!! :)
