Default Spectacular Salad Wreath

I saw a similar recipe on Pinterest and tweaked it a little. I made this for Christmas dinner and the family was very impressed. So easy too.

1 pkg baby lettuce or spring salad mix
3 cups iceberg lettuce torn
1 cup baby spinach leaves
fresh strawberries
fresh blackberries
red grapes in small bunches
1 apple sliced
1 red pear sliced
1/2 cup dried cherries
1/2 cup cashews or pinenuts
Dressing
1/2 cup fresh squeezed lemon juice
1/2 cup olive oil
1/2 cup honey
1Tblsp diced red onion
Combine all dressing ingredients in the blender and buzz until smooth. Stir in poppyseeds. Place a dish for the dressing in the center of a large round tray, layer the iceberg lettuce, then the baby lettuce in a circle around the dish. Decorate with remaining ingredients. Enjoy! Peggy

wow, looks great!! I was afraid it was going to be a "Lime-jello-marshmallow-cottage-cheese-surprise" type of salad!!

I'm still laughing at your reply. I guess I should have titled my post differently like, "Salad wreath, no cottage cheese involved" or something like that. Peggy
