Homemade Strawberry jam....
#1
...I know you can get a recipe for this anywhere, but this is the one I used last weekend (I went strawberry picking and came back with £15 worth!!) to make some jam....
2kg strawberries, tops trimmed off
1kg sugar
juice and rind of two lemons
Throw it all in a big pan, heat slowly until the sugar has dissloved, stirring well. Then turn the heat up high and boil rapidly until you have reached setting point - you can tell this by putting a drop of the jam onto a saucer that has been in the fridge. Allow to cool for a moment, then push your finger through it. If the drop of jam 'wrinkles', it is ready. Pour into sterilised jars, seal tightly and store in a cool dark place.
This came out really well, and is YUMMY!!!!

That recipe filled eight of them, with some left over that I used straightaway for a sponge cake.

I miss canning the fruits and veggies.
Loretta, Ball makes nice jars with self sealing lids. That's what I used to use when I did canning. Haven't done it in years. I'm not into canning mango or papaya.
