Thread: Turkey Meatloaf (all week)

    When I cook, I like to make a lot, for lunches and leftovers. No use getting all the pans dirty only to have tonight's dinner!

    Mix 1 large package ground turkey in a large, large bowl with:
    4 beaten eggs
    2 envelopes onion soup mix
    1 1/2 TBSP parsley
    2 tsp dry basil
    2 tsp dry oregano
    1 tsp garlic powder
    1 tsp ground black pepper
    1 1/2 tsp salt
    1 TBSP worchestershire sauce
    1 large bell pepper, diced small
    2 cups bread crumbs
    1 cup quick cooking oats ( or enough to where the meat is no longer sticky, but will make a ball )

    Mix well by hand to form a ball.

    Form a loaf in a 13 x 9 pan sprayed with cooking oil spray.

    Mix 1/4 c mustard with 1 tsp liquid smoke, 1 cup ketchup, 1 1/2 tsp paprika, and 1 1/2 tsp black pepper. Spread this over the meatloaf to cover. I omit brown sugar since the paprika makes this sweet enough.

    Bake at 350 for one hour, or until center is not pink.

    That sounds yummy and easy. Have you ever used this recipe with ground beef? My hubby won't eat turkey.

    I haven't made it with ground beef, but I am sure it would work. You might need less eggs and bread crumbs, since turkey is not as hardy as beef.

    Great recipe! My favorite part about meatloaf is COLD meatloaf sandwiches! Toast, S&P, mayo and slabs of cold meatloaf. I really prefer it like that, but I'll eat it hot the first night! I made meatloaf nachos last time I had some leftover. You get really creative toward the end of the loaf! My kids HATE when I make meatloaf! LOL! They like "new" food!

    I get creative too. The last meatloaf I made I did Italian style, with some pasta sauce on top and more Italian spices (ie Italian bread crumbs, ground beef and more basil).

    When it was half gone, I cooked lasagna noodles, mixed up a batch of filling with the ricotta and mozzarella cheeses, and just laid a slice of meatloaf on half a noodle, slapped the filling and some cooked spinach and mushrooms in there, folded the noodle over the top and tucked it in. Sauce and parmesan on top, baked for half an hour, and I had individual lasagna servings!

    It was a big hit at my Gramma's 88th birthday and no one knew they were made from leftover meatloaf. LOL

    Yum! The lasagna meatloaf with mushrooms and spinach sounds so good! I have got to try that!

    the package I get says ground white meat, if that helps.

    I use half turkey and half beef, Makes the picky people happy, they never know they are eating a little more healthy :wink:

    I just read a meatloaf recipe where you put the meat into mini loaf pans. I have one that makes 6 or 8 mini-loaves. I will have to try this the next time I make meatloaf. I will be real easy to freeze them that way.
