I made this one for Thanksgiving, and everyone loved it. Easy and yummy!
1 package frozen baby peas - thawed
    1/2 cup chopped sweet onion
cubed cheddar cheese <to your taste>

Dressing: Mayonnaise - and salt & pepper

I use a bag of frozen peas, they hold up better.
A small container of lite/nonfat cream cheese. If i need more to blend i will add ranch dressing.

Diced cheese of any flavor is always good. Purple onions are showy, add salt and pepper to taste.
    sunflower seeds too.

My mother was from PA, she took 2 cans of sweet peas, cut up Candied Dill Pickles, soft boiled eggs, mixed with mayonaise. At Christmas, she added pimentos. I love this recipe, but I am in FLorida and for the life of me I cannot remember the Brand Name of these pickles. She was from Apollo Pa, and bought them there. If anyone knows of the brand please let me know. Good Luck in finding the right recipe for you!!

I am from New England and never heard of pea salad until we started travelling the US and saw it on buffets in restaurants. We called it Peas n Cheese until we learned it was Pea Salad. Yummy, don't know why it hasn't spread to the northeast.
