    Default Sugar-Free Oatmeal Cookies

    Sugar Free Oatmeal Cookies

    Makes 2 Dozen Cookies

    Preheat Oven to 375º

    3/4 cup Unsalted Butter
    2 tbsp each:
    Erythritol
    Xylitol
    Brown Sugar Twin
    (Can use all Splenda or combination of any other sweeteners to equal 6 tbsp) (about 1/3 cup total)
    HINT: Combining two or more sweeteners (in any recipe) gives a more-sugar-like flavor!

    1 Egg
    1 tsp Water
    1 tsp Vanilla Extract
    1 Small Box Raisins (single serving size)

    3/4 cup Oat Flour
    1 1/4 cups Rolled Oats
    1/2 tsp Cinnamon
    Dash Ground Cloves
    1/2 tsp Baking Soda

    Measure dry ingredients together into a paper plate or bowl. Stir Raisins into dry ingredients.
    Beat together Butter, Sweeteners, Egg, Water & Vanilla Extract. Slowly add dry ingredients just until mixed.
    Drop by rounded tsp onto un-greased baking sheet. Bake 12 to 14 minutes or until golden.

    Remove and let sit on baking sheet for two minutes, then remove to cooling rack. Cool completely before storing. Waxed paper or parchment between layers of cookies when storing will help keep them from sticking together.

    Thank you for the recipe. My husband is a walking sugar tooth as well as diabetic. I have been noodling with a recipe for these for him but never hit the mark. He will be thrilled.

    Baking is fun for me as I suspect it is for you. If you are interested, I have a few that turn out well and can be doubled. (I like to bake but not every waking minute. A lot of our friends are diabetic and appreciative eaters along with my husband.). The most popular are blueberry muffins and banana bread.

    If you didn't see them yet, Pillsbury has created sugar-free chocolate and vanilla cake mixes that serve as the basis for a bunch of other sugar-free stuff: coffee cake, etc. There are sugar-free frostings to go with the mixes. Please note that the frostings improve greatly with the addition of a little milk or cream. I noticed Pillsbury also offers chocolate brownies. Made those while we were camping, added nuts, used the chocolate frosting and cream cheese on them and took them to a get together. The plate emptied. I adore the oven in the rv; wish there was more than one.

    Forgot one thing. Once upon a time a recipe required brown sugar. I called Splenda and asked if they were in the process of creating s-f brown sugar. They said they were creating the brown sugar/Splenda blend and then told me how to come up with s-f brown sugar. Combine Splenda and s-f pancake syrup. IT WORKS BEAUTIFULLY. Forgive me, I am a "plop, plop cook and the despair of my children so I do not know how much Splenda to how much syrup. I cook to people's taste. If you are a brown sugar fanatic, brown sugar taste you get. If not, probably not so much brown sugar taste.

    Where for the s-f chocolate chips? Name of them too, please.

    A long time ago a local chocolatier (Peterbrooke) would let me buy bulk s-f chocolate. Then they wanted to sell the molded candy to me at $7 something for 8 ozs. (I wanted to make fondues, etc out of the bulk.). And they were prune-ish (real comment expurgated) when I even asked for bulk. (I had been buying whatever chunk of chocolate they had available, not asking for a specific weight, and I didn't turn up often enough to be running my own business.)

    Anyway, s-f chips would be a big addition to the bakery around here.

    Zennia, I will try to get the recipes to you today. I have never sent anything privately on this board so if I have trouble, I will keep trying. Don't want you to think I forgot if it takes me a try or several.

    Thank you so much, I am always running to Wall Mart to get the sugar free oatmeal cookies. Now I will be baking my own. Just found out this week I am border line diabetic so I need all the sugar free recipes I can find.

    Hersheys Sugar Free Choc. chips are at Wal Mart right with the other choc. chips.. just look and make sure they are sf i think they have a little bit of grey on the pkg.

    Sounds good. I make fat free/sugar free oatmeal cookies. I replace the oil or butter with applesauce and use Splenda.
    I use applesauce in my cakes also to keep the fat content down.

    errrrrr, when I see those sugars that end in -ol, they make me think I will be spending a lot of time on the throne. They do not agree with me at all .
