4 large baking potatoes microwaved and peeled and cubed
1/2 vidalia onion or sweet onion diced fine (small onion)
3 or 4 large stalks of celery cut in half and sliced
5 large hardboiled eggs chopped
Duke's mayonaise 4 heaping serving spoons
1 measured teaspoon of dry mustard or 1 tablespoon of yellow mustard (like French's)
1 tablespoon cider vinegar
black pepper to taste

follow directions for above ingredients, mix in large bowl and refrigerate. This is extremely yummy potato salad. You can use less onion, but don't go short on the hardboiled eggs!

My friends just love this potato salad!

You can always add more or less mayonaise to your liking! My friends just love this potato salad! (and actually ask me when will I make it) The dry mustard gives it a bit of a kick, where as the yellow mustard is more mild.

Just made this for dinner tonight, that's if I can stay away from it that long. Of course I had to taste it and WOW it was so good! I love potatoe salad and have a hard time making a good one, but you have solved that problem! Thanks

Oh I am so glad that you like it!! Very creamy and just so good! I think all of the eggs make it so tasty.

most are for two or more and i don't always want to freeze .

You can easily make this recipe with one large baked potato, 1 large stalk of celery, a few slices of onion chopped, two hardboiled eggs, a big tablespoon of Dukes Mayo, a small squirt of yellow mustard, a shake or grind of black pepper and its done! This is so easy and so GOOD!
Sometimes I make a small batch for my son and I.
