    This is a great way to use alot of zucchini and trick ZUCCHINI HATERS. Everyone who makes them always give the recipe to others. No one can tell it's zucchini.
    I FREEZE LOTS TO USE DURING THE YEAR.
    Just used the last from a year ago.
    I have a food processer so makes the slicing easy.

    HOPE YOU ENJOY


    8 c. sliced zucchini (peeled)
    2/3 c. lemon juice
    1 1/2 tsp. cinnamon
    1 c. sugar
    3/4 tsp nutneg

    Bring to a boil and cook til tender. Stir frequently. Set aside.
    OR
    Put into 1 quart freezer bag and freeze for later use. Lay flat and stack them. When ready to use , thaw and make flour mixture.

    Mix well
    4 c. flour
    3 sticks butter
    2 c. sugar

    Pat 1/2 the mix into a 12"x15"x1" baking pan.
    Bake @ 350 for 20 mins.

    Add 1 tsp. cinnamon to rest of flour mixture & set aside.

    Remove from oven
    Spread zucchini mixture over top of hot crust and cover with rest of flour mixture. Return to oven and bake @375 for 25 to 30 mins.

    I forgot to say that I have even made pie crust and used that instead of the flour mixture. It's just like a thin apple pie.

    sounds good, how much water do you add when you are boiling, and do you drain the water off before you put it on the first layer, thanks

    No water. Just put zucchini, lemon juice, sugar and cinnamon in a pot and cook til tender. Will thicken as it cooks.

    Not a cake. Has a crumb like crust on bottom and top with "FRUIT" filling in the middle.
