I have a Bosch dual fuel stove that has convection/dehydrate/proof. Yes I am bragging. I love it. t did sit in the shed for five years before installation. Threatened to cancel Holiday dinner in order to get it installed. I love the convection for all the same reasons, can load up the oven and not worry about uneven baking.... You just have to get used to it......

I had a stove with a convection oven. HATED the stove (brand not mentioned) and only used the convection oven twice. Didn't see the need for it. I bake my own bread, desserts and do a LOT of cooking and roasting.
I gave the stove to Habitat for Humanity and bought a GE Profile. The oven in this stove is SO accurate that when the recipe says it will be done in 20 minutes, I can count on walking away til the timer goes off. When I take out the finished food it is done to perfection.
I see no need for spending all that extra $$ on convection.

I have an old house, have a small convection oven that I use more than the big, replaced twice in 40 years in the wall one.
I love the way it cooks, don't use the microwave much at all.
Can't remember when I used the wall oven.
