    I use chopped dates in place of raisins in any recipe - I especially like oatmeal cookies with chopped dates & pecans - YUMM!

    I used to make a cracker-cookie with chopped dates - really yummy!
    Cook to mush: 1 can sweetened condensed milk, 1 lb of chopped dates - stir in chopped walnuts (optional) and spread on oval (Townhouse) crackers. Frost with a little vanilla canned frosting. Topping will firm up as it cools - Makes a BUNCH and I remember freezing them too.

    This is an old recipe & haven't made it for a long time, but it was Mom's.
    Matrimonial Cake
    3/4 cup butter
    1 cup brown sugar
    1 1/2 cup flour
    1 tsp. baking soda dissolved in 2 TBSP hot water
    pinch of salt
    1 3/4 cup rolled oats

    Cream butter, add sugar, flour, rolled oats, salt, bkg soda & divide mixture in half. Spread half on bottom of 8" square pan. Place filling over this & top with remaining crumb mixture. Bake at 350*F for 30 min. and cool.

    Filling mixture:
    1/2 lb dates
    1 cup hot water
    1/2 cup brown sugar

    Make your favorite pie crust recipe cut into diamond or even square shapes put 1 tsp of orange marmalade on dough top with a date or spoon of chopped dates fold the ends across date orange mixture bake at 350 for 10 to 15 minutes very yummy. For some reason I make these for Christmas every year.

    Date Balls with Rice Krispies and rolled in coconut are yummy - and I don't like dates.

    1. 1 pkg. chopped dates
    2. 1 c. sugar
    3. 1/2 lb. butter
    4. 1 beaten egg
    5. 2 1/2 c. Rice Krispies
    6. 1/2 c. chopped walnuts (optional)
    7. Coconut OR powdered sugar

    Mix first 4 ingredients and cook 10 minutes over low heat. Stir constantly. Remove and COOL. Add Rice Krispies and walnuts. Form balls and roll in coconut OR powdered sugar.[/TD]

    How about an Apple Date salad? So easy to fix!

    1.Core and cut apples into bite size pieces, leaving the skins on. (I soak mine in Sprite or 7-Up for a few minutes to keep them from turning brown, then drain when ready to continue)
    2.Add in the date pieces.
    3. Mix in mini-marshmallows
    4. Stir in Cool Whip into ingredients until blended.

    Voila...instant salad that goes great with any turkey, pork or chicken dinner. I sometimes mix in Spanish peanuts if you want to add a little crunch with a salty flavor!

    Default Mom's Coleslaw

    1 small bag cabbage, red cabbage & carrots
    1 C. diced apples, w/ skins on
    1 C. pineapple tidbits, drained
    1 C. chopped dates, pitted
    1/2 C. mayonaise
    1 T. sugar
    1/2 t. lemon juice
    salt (optional)
    Mix well and chill at least one hour before serving.

    I make cranberry date bars that are good but you need fresh cranberries.
