I haven't yet made quilts for my big guys, but for the 12 & under ones I've done basically crib size throws out of 2-1/2" squares in 1)a variety of greens/beiges for a sort of camo effect, 2)similar green/beige but creating a light color X blending to the green at the edges, 3)red/black/white diagonal stripe design of bandana fabric, flames fabric, check, swirly print. I've also done the fabric panels (Spiderman, Cars, etc.) and backed with a solid fleece. All have been very well received. Oh and I did do a flying eagle panel wall hanging for one of my then teenage guys when he graduated from HS.
