I've seen patterns where the center piece is stitched down "as is" to be a square. And others where the loose edge is folded and pressed inward in a curve...like a cathedral window curve...and sew down along the inside edge to make a curved center piece. Looks easier to do on a large block than a small one. That way you do have a little curved sliver that's still three-dimensional, but it's not very much.
