We had prime rib on Tuesday night. Rather than a regular baked potato, I boiled the potatoes, with skin on, until just done. Cut potatoes length wise in half, placed in a baking dish skin side down. Brushed with melted butter, sprinkled with a few different spices, little salt and pepper. Topped with grated cheese. Baked until cheese was melted and potates were hot and crusty.
Cut a couple of slits in meat of potato before adding butter.
Everyone enjoyed the different taste.
