Want your yorkshires to be huge: Make sure that all the ingrediants are room temperature, and liberally use pepper. I also put salt in my yorkshires. Make sure that the oven has enough room. They will come up about 6 inches!

Prime Rib has been our new family favorite for about 10 years. I was watching Martha Stewart one day and she had a guest cook in from England. She took 2 pounds of new red potatoes, peeled them, boiled them for about 20 minutes. As soon as you can handle them, take a fork and score the outside of the boiled potatoes. Take the scored potatoes and toss them with the drippings form the prime rib, season with sea salt and pepper, bake for 30-35 minutes and serve. Yes, there is a little work to making them but they are so delicious.

Another favorite has become brussel sprouts. I watched Rachel Ray make these. Wash and halve 2 pounds of brussel sprouts. Take 1/2 lb of bacon, diced, one diced onion, 1 T of minced garlic, put into large pan and cook until the bacon is done and onions translucent. Add the prepared brussel sprounts on top of bacon mixture, season with salt and pepper, Turn down heat just a bit and cover to let the sprouts steam. They will absorb the flavors and have a beautiful green color. You don't want to burn the bacon mixture while they steam so toss occasionally.

We love asparagus with prime rib.

Place asparagus spears on a cookie sheet. Pour olive oil to lightly coat the spears. Sprinkle seasoning salt on spears and with your hand(s) turn the spears around the oil to mix with the seasoning. Bake about 10 minutes at 350 degrees. Hmmmmmmmmmmmmm good.
