you can do it pillowcase style, then top stitch around the edges if you want to, or go ahead and quilt it and don't worry about the back, quilt the top the way you want to quilt it, the minky will be fine. as for using the silky binding, you will need to either pin every 1" or pin about 6" at a time, stitch it and pin somemore, the minky is quite slippery and the silky ...you will be working with greased ice. a very new sharp needle at this point, lots of pins and no time to be running any races, slow stitching and it will turn out just fine. you might be able to add some sort of interfacing to help with the slippery-ness. but lots of pins and slow sewing will work too.
