I have never had a problem with Minkee. I do it the same way as Lovin. No problem with quilting since the spray basting kept it from shifting. Trimmed the backing to two inches all the way around and folded the edges over the top of the quilt and used a decorative stitch to secure it.

If you decided to do the pillowcase style, think about using a decorative stitch to "tack" it in several places. A little heart or flower would be cute.

thank you all for your advice. I will be sewing the top together this afternoon. well actually pinning the snot out of it and then sewing it together. I can't wait to get it done. I am still waiting on some pictures to place in the white diamonds. going to put the pics on fabric and go from there. this will be the first picture quilt ever. hope it holds up to washing.
