We also love a spinach/ pasta dish that goes something like this: In a medium to large non stick fry pan, saute a chopped onion and some sliced mushrooms in olive oil at a medium low temp. until about halfway cooked. Add some garlic powder or chopped garlic and about about a pound of chopped fresh spinach and cook til done, stirring occasionally. Stir in some pine nuts,optional, (if you can afford them!) and toss with a pound of cooked whole grain pasta such as rotini or small penne. Serve hot with freshly grated Parmesan cheese. YUM!
