Take a bunch of spinach leaves, wash under running water, shake out excess water, put in sauce pan. (Some of the water will remain on the leaves and this is ok. ) Cook until leaves are wilted. Place in bowl, add 1-2 sliced green onions, a tsp. of sesame seed oil, 1-2 tsp soy sauce, and toasted sesame seeds. This is better if allowed to chill for a couple of hours before serving. If you don't have green onions, use a couple of TBS. of sweet onions, finely chopped. Sometime if we're hungry for this dish, I'll use frozen spinach. (we're 25+ miles to the nearest grocery store)
