Boxed cake mixes are usually made with water. Sponge and chiffon cakes from scratch are usually made with water, as are some homemade chocolate cakes which use cocoa powder. These cakes usually call for shortening or oil, not butter.
I assume you can use eggs. If not, just google eggless cake recipes and you should find quite a few.
