From-scratch pancake mix (instead of Bisquick)
2 cups flour
2 Tablespoons sugar
2 Tablespoons baking powder
1 teaspoon salt
mix and store in airtight container.
For pancakes, add:
1/4 cup oil
2 eggs
approx. 2 cups milk or buttermilk
for waffles, use only 1 egg
If you use buttermilk, the pancakes end up being SO light, fluffy, and soft!
