I found this site by accident, but noticed a topic about Eggies, seen on TV. I thought I would share a trick for peeling hard boiled eggs. I worked for years in an "egg factory" of sorts. 250,000 chickens laying eggs and leaned a lot. First--to tell the age of an egg. Put the egg in a glass of cold water. If it stands on end, it is under 10 days old. If it lays on its side, it is over 10 days old. If it floats, throw it out FAST. It is rotten. To peel hard boiled easy, the age makes no difference. After boiling remove the water and put the pan back on the burner. Shake the pan until the eggs are all cracked, then pour in extremely cold water and let them sit a bit. The peels normally fall off with very little pressure from your hands. Never has failed me.
