Put 12 red peppers through the chopper (I just use my food processor)
Place in a colander and let drain for 2 hours
Bring to a boil
1 tbsp. salt
3 cups sugar
1 cup vinegar
Add peppers and simmer 3-4 ours. Pour into jars
Serve over a block of cream cheese with crackers of your choice.
This makes a pretty large batch so there's plenty to use as gifts. I sometimes cut the recipe in half. It works just fine.
