Another way to go is to do a single or a few , oversized block(s). For example, I may make 9-11" HST units, depending on the usable size of my fabric, and make a sawtooth star or a friendship star from those. The result is very quick, without making a dull quilt, IMHO.

If you "birth" your quilts, you don't even have to do binding.
