pick up a variety of white on whites (so you have different prints/textures) & make a quilt using those- i made one all star blocks (from Alex Anderson's book-Keep Quilting with Alex Anderson) i actually used all cream fabrics in different prints/textures- it really turned out quite wonderful.
i've seen bargello's made with all one color in a variety of texture/print too- you can really choose a collection of white fat quarters & use them to make any fat quarter friendly quilt- when it's done you will be amazed how it looks when laid out.
