Default Good Spinach Bacon Quiche Recipe

This has always been a hit whenever I take it to functions.

6 large eggs, beaten
1 1/2 cups heavy cream
salt and pepper
2 cups FINELY chopped fresh baby spinach, packed
1 lb. bacon, cooked and crumbled
1 1/2 cups shredded swiss cheese
1 - 9" refrigerated pie crust, placed in glass pie plate

Preheat oven to 375 degrees.

Combine the eggs, cream, salt, and pepper. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 - 45 minutes until the egg mixture is set. Cut into 8 wedges.



A friend made it and said it didn't turn out as well as mine. I think the trick is to make sure you are finely chopping the spinach and crumbling the bacon into relatively small pieces (smaller than bite size). Yes, it takes time but I think it's worth it. I try to do this in a two step/two day process. You can easily get the bacon cooked and crumbled a day ahead of time. Then the day you need this you can devote your time to cutting the spinach. I like to use kitchen scissors but you might do just as well with a knife and chopping it-just no big pieces! My kitchen scissors are really just regular office supply scissors but I've labeled them "food" and only use them in the kitchen. They work better than the scissors I've had from kitchen supplies in the stores.
