I learned the hard way to always do a sample block, or blocks. I have an entire bag full of fabric I wouldn't use in a quilt, and that's what I use for the sample blocks. Then I don't feel so badly about throwing it away -- as soon as I've finished the project. Those sample blocks can come in handy, especially if you are doing a different color block than the original.
