I also cover with foil but put the ribs on a rack on the baking sheet so that they do not sit in their own fat. But I cook them at a much lower temp--usually 275 degrees for 2-3 hours. Then pour off the accumulated fat or put on a different pan and raise the temp. or throw on the bbq and finish with sauce.
