I like your idea. If I were trying to make that as a quilt, I would think of making 'strata strips' as Nancy Zeiman calls them, then cut those onto triangle shapes, and fit them together. I would start with a paper sample, with pens to show color maybe, to find what the angles need to be to make it work, then start cutting the fabric strips.
It will be beautiful when you are done.
