I have discovered that if I put the seam I am pressing near the edge of my ironing board and let the rest hang down then I am only pressing the one isolated seam. I then turn my fabric and press the other seam, with the fabric again hanging down. Hope that makes sense.
I was going to suggest this too. Another way to press your seams open is to hold up the unpressed fabric with the none iron holding hand at about a 45 degree angle, wriggle the nose of the iron into the opened seam and slowly work your way to the other end. For some reason holding the fabric up at an angle lets that seam open right up and pressing it open is easy.
