My DH has Celiac & you really have to be careful not to cross contaminate things. You also have to make sure there is no wheat, barley, or rye in what you make. My DH loves my potato soup. I just chink the potatoes & cook till soft. Then add a little milk butter & precooked bacon chunks, salt to taste. The more the butter you add, the better it tastes. A warning tho. If you have used the butter before, it will be cross contaminated. You will have to use a new container of butter. Most things you buy that is gluten free is nasty tasting, but home made stuff isn't so bad.
