Welcome Jacki to the wonderful world of quilting! Binding is necessary if your edges are not turned in and sewn closed. You need to figure out what you want on the back of your quilt. Also, usually there is a layer of batting. You may have to google or u-tube a video about cutting up your jelly roll. Unless you're talking about making 2 1/2" squares out of your jelly roll. If so, do you have a cutting mat and a rotary blade and ruler? If no, you may want to pick up one of those sets that Joann's has. Usually priced at $45, it often goes on sale for $30. With those items you can measure and cut up evenly....just about anything!
