Default Apple Pie in a Goblet

Tried this recipe this evening for an anniversary dinner for some dear friends. I was a little nervous about using a new recipe so had a back up. This is a great dessert and looks pretty in a goblet or a wind glass. (recipe is from the Taste of Home cookbook) The warm apples slightly melt the ice cream Easy Easy!
3 large tart apple
1/4 c sugar
1/4 cup water
3/4 tsp cinnamon
1/4 tsp nutmeg
12 shortbread cookies crushed
2 cups vanilla ice cream
whipped cream


Place 3 large tart apples peeled and coarsely chopped in a sauce pan with 1/4 cup sugar, 1/4 cup water, 3/4 tsp cinnamon and 1/4 tsp nutmeg. Bring to a boil and lower heat. Cover and simmer fro 10 minutes until apples are tender. Uncover and cook for 9-11 minutes until most of the liquid is evaporated. I cooked this early and reheated it before serving.
In each goblet or parfait glass layer 1 tablespoon cookie crumbs 1/2 cup ice cream, 1/4 of the apples, top with remaining cookie crumbs and whipped cream. Serve immediately.
