Super easy would be to sew together 6" or so strips of a baby fabric alternating with a coordinating fabric from your stash.

Another quick quilt would be a solid color with appliqued animals of different fabrics - teddy bears, cats, bunnys or even stars and quarter moons. I like to do the applique where you sew the shape together with iron on interfacing (right side of fabric to sticky side of interfacing), trim, snip the center of the interfacing and turn, iron on and sew down. Or you can do raw edge applique.
