Since I'm a beginner, I'm trying several (easy) things.

I keep a ball of yarn and a crochet hook at work and in the house for something to keep my fingers busy. I can do dishcloths and have figured out a simple granny square (from watching a youtube video).

I'm learning to sew, so I've made pillowcases, pajama pants, a tote bag (one looked like a cow), and now I'm working on an apron using some cute Halloween fabric.

My mom, who has crafted forever, knits socks for everyone (and we love them!), makes fingerless gloves for me for when I do photography in the cold, or for at work when I have to do my outside rounds. She also does sweaters, collars, Christmas ornaments, etc. You name it, she can probably make it!

My next projects (besides quilting) are making a cloak for me, and then some costume items for my son (to wear to places like the Oregon Shakespeare Festival, etc).

Eventually, I'll get my woodshop built and have to chop out time for that as well. Retirement can't come soon enough!
