Fat Quarters are a great way to build a scrap stash quickly. I pick them up because they are like pieces of candy (and hence frequently by the register for impulse buys).
I'm trying to work through some of them by cutting one or two 10 inch squares from each fat quarter and pairing them with a 10 inch square of a solid color or a neutral to make half square triangles (two 10 inch squares makes 8 - 4.5 inch unfinished hst). They are a handy size and shape for many projects (I like to pair them for scrappy flying geese).
