LOVE LOVE the idea. I would put the gingerbread people on the left (but that is just me). I would just make sure the head had reinforcement of extra stitching around its edges because it would get more wear and tear with silverware possibly being moved in and out of it. Pieced or solid material - seems llike either would work. I don't know anything about kraft-tex, so no opinions.
