I don't see a picture of your cutting table, though. Did I miss something? A cutting table the right height was the best decision I ever made for myself in my sewing room. Well, that, and my machine.

Re: scraps. If you want to tame some more rather than bother cutting them down, or if you're just tired of looking at some of them, why not host a guessing game on here? It's fun to play, fun to give, fun to win, fun to get new scraps. It's a form of "birth control" for my scraps that love to reproduce.
