Piccolo squash
I was gifted a piccolo squash. It's about the size of a large acorn squash and the outside looks like a watermelon. I was told it's a summer squash, but it's been sitting on my counter for over a week, and it's still firm. Most summer squash I know of would be rotten sitting on the counter that long.
But -- I can't find any recipes for one this large. The only cooking instructions I found were for squash about the size of lemons.
So, I'm hoping you can help. What do I do with a piccolo squash?
