    Piccolo squash

    I was gifted a piccolo squash. It's about the size of a large acorn squash and the outside looks like a watermelon. I was told it's a summer squash, but it's been sitting on my counter for over a week, and it's still firm. Most summer squash I know of would be rotten sitting on the counter that long.

    But -- I can't find any recipes for one this large. The only cooking instructions I found were for squash about the size of lemons.

    So, I'm hoping you can help. What do I do with a piccolo squash?

    Never heard of it. Sounds like cross and the flesh might be inedible. Could we get a picture??

    Maybe stuffed or grated for zucchini bread would be your options.

    Thanks for the link. I think zucchini bread might be the best option. The squash should have been harvested when it was the size of a tennis ball, not a small watermelon.

    I didn't look closely at the tag when I bought zucchini seedlings. I thought there was only one kind -- surprise!!!! I got round zucchinis!!! We have beeen harvesting them when they are small and those that get away we give to out neighbor who loved zucchini bread. Next year I will look closely at the tags.

    When i get a squash that big, I'll buy a pork roast 3lbs and have the butcher cut it into cubes. Brown the meat in a large pot, add the cut squash, seasonings(salt and pepper, will do fine), water to almost top of the meat and squash, stir in tomato sauce. Cover and simmer, stirring occasionally. Do not allow to dry. Squash also release water. It is done when the meat is very tender. Great with steamed rice. Sorry I do not give exact measures as I do no cook like that.
