One side is treated, shiny and slick (that's the side that goes up against the food, such as raw meat) and the other side is ordinary paper that you can write on. It works well in applique as templates and in paper piecing because you can draw on the ordinary side and, with the slick side down on your fabric, when you press it with a hot iron, it sticks to the fabric. It can be easily removed and can be used repeatedly for applique.
