I thought of using fleece instead of batting because I'm tired of spending hours and hours and plenty of money on fabric, batting and backing only to end up with a stiff quilt. I use Warm and White or Warm and Natural batting and I use the minimum amount of quilting that I can 'legally' get away with but the quilt is still somewhat stiff or not as soft as I'd like it. The backing fabric is soft and pliable, the quilt top is soft and pliable but add the batting and it changes everything.
I'd have to use too many layers of flannel in place of batting so I thought of fleece.
