Back when I could still do carbs, I did quite a few things like cake and cornbread in my skillet and dutch oven. And of course, the biscuit style dumplings!

Most any pre-made single layer or coffe cake mix can be used.

Most of my camping was backpack/low weight style, but I'm a pretty accomplished campground cook for car camping with cast iron and fires.

One of my favorites was from Girl scouts, you start out your meal with an orange, cut the top off and scoop out the insides with a spool so the peeling remains whole. Use a gingerbread cake mix, fill the orange about 2/3-3/4th with cake batter, put the top on, an roll together in foil, put the whole ball in the coals and let bake. I suppose you could just put them in the dutch oven and try cooking all at once, but it was a way to keep the kids occupied too, messing with their orange.
