Back when I could still do carbs, I did quite a few things like cake and cornbread in my skillet and dutch oven. And of course, the biscuit style dumplings!
Most any pre-made single layer or coffe cake mix can be used.
Most of my camping was backpack/low weight style, but I'm a pretty accomplished campground cook for car camping with cast iron and fires.
One of my favorites was from Girl scouts, you start out your meal with an orange, cut the top off and scoop out the insides with a spool so the peeling remains whole. Use a gingerbread cake mix, fill the orange about 2/3-3/4th with cake batter, put the top on, an roll together in foil, put the whole ball in the coals and let bake. I suppose you could just put them in the dutch oven and try cooking all at once, but it was a way to keep the kids occupied too, messing with their orange.

I have all sizes of cast iron skillets. One will fit the recipe. My favorite thing to bake in them is cobbler. Lodge introduces a new cast iron product at least once a year. The last one was a divided skillet.

I use my cast iron skillets for everything. I have one 14" one (huge) 3- 12" ones and 2- 5" ones as well as 2 flat iron ones for warming foods. Everything from frying to baking. What is corn bread without cast iron. Cakes are great! that is why I have 2 -12" ones. Keep in mind it is narrower at the bottom than the top. There is usually one sitting on the stove ready for use.

I had the handles cut off two skillets to make cake pans to fit on the same oven rack. Also had the handle cut off a small skillet so it would fit in my countertop oven. I don't have to wait for the big oven to preheat for a small pan of cornbread.

I love my cast iron pans. I used to have more, but they've disappeared over the years. I should reinvest and get some other sizes. They're not that expensive to buy new. My favorite one that I still own is square, instead of round. It's great for burgers because those corners give just enough extra space for the patties. My other one is a round, 12" one that I've owned all of my life.
