I drain them, roll them around in a little olive oil, then some chili spices and bake them on a flat sheet pan until crispy on the outside and soft on the inside. Makes a great snack!
Also, Put a can of beans in a pot, add a little oil, some Indian curry spices, chopped onions and a few handfuls of spinach, cook until wilted, then add a can of coconut milk and a half teaspoon of concentrated, veggie broth. Serve over rice, with some naan on the side. Yum!
