I made "tofu hollandaise" sauce today. I poured it over a couple of pieces of homemade sourdough and some roasted asparagus for breakfast. Pretty yummy! I won't try to fool ya...there is really nothing as decadent and lovely has real, homemade hollandaise, but this version is super easy to make and doesn't have the calories, fat, or cholesterol that the real version has. It doesn't taste bad either.

In a blender add:
1 box shelf stable tofu, any firmness
juice of 1-2 lemons, depending on your taste
about 1 T olive oil
about 1-2 T nutritional yeast
black salt to taste (Adds that eggy flavor. If you don't have any, regular salt will do, but it will not taste as rich.)
a dash of hot sauce
a couple of T of water

Blend until smooth and creamy. You may have to add more water to get it all to whirl around in the blender, but don't add too much, or it will become runny. Pour into a pan and heat under low just until very warm. Serve.
