I do southwest style bowls frequently:
Salad Lettuce, Black beans, Cilantro Rice, Stir fry vegetables (with cumin seed and some southwest seasoning), cherry tomatoes, cheese, avocado (or guacamole), drizzled with poblano or chipotle dressing.
