Not all meals have to have meat, nor any animal protein for that matter, to be delicious and healthful. During these early days of spring, I look forward to getting away from the heavy dishes of winter. I made a Leek and Lemon pasta dish the other night and even my "meat only" son loved it. I used regular pasta and skipped the Parmesan cheese and it was so light. It tasted like Spring! I served it hot, but it would make a wonderful cold, pasta salad too.
