Not all meals have to have meat, nor any animal protein for that matter, to be delicious and healthful. During these early days of spring, I look forward to getting away from the heavy dishes of winter. I made a Leek and Lemon pasta dish the other night and even my "meat only" son loved it. I used regular pasta and skipped the Parmesan cheese and it was so light. It tasted like Spring! I served it hot, but it would make a wonderful cold, pasta salad too.

I was vegetarian/vegan for a number of years and am still much more plant based than my ketovore husband.
The other day I was looking at what I had on hand for a snack, I've been allowing myself apples but I have to have protein with them which is usually just some peanut butter or a piece of cheese
But I sliced up the (cosmic crisp) apples into thin slices, put them on a plate and nuked them with pre-grated Mexican cheese mix, sort of like nachos! The apples were barely warm with the cheese melted and were still crisp. For a more savory presentation, some Dijon mustard might be on the plate next time.
Back in my V-days, I would do a Reuben Sandwich, substituting apples for the corned beef but otherwise all the regular ingredients. That was really good and unexpected.

Growin up with a big garden we ate garden foods most all summer and a lot of fresh caught fish. I'm lucky my husband started gardening when he retired and my grandson loves to fish. I feel like I'm eating at my childhood table again.

Yes, the gardens are a big deal at our house. It's so nice when they are going off and we don't have to buy that old, inferior produce at the supermarket. My DH started early this year and grew lots of Toscano Kale...some for us, some for the chickens. He put it on our porch steps so that I wouldn't have to hike down the hill to his garden, which makes it very convenient to grab some kale at the last minute while making dinner.

I usually have a bag of cole slaw and when it's getting a bit old, I make cabbage pancakes. Saute an onion chopped fine and the slaw, let cool a bit when cooked. In a blender mix one egg, about 4 ounces cottage cheese, and then add about 1/4 cup flour and some salt Add the vegs to the batter, fry in olive oil as pancakes. Serve with sour cream and fresh dill. This is what I make for me, it makes about 4 pancakes. You can find the bigger recipe online, I believe they call it cottage cheese pancakes.

We're trying to cut back on cholesterol laden foods, so this morning, we had avocado toast, with tomatoes and hot sauce, a couple of dried apricots, a handful of blueberries and a few pistachios, along with our morning coffee. It was so pleasant to eat fresh foods and not have to cook.
