I was vegetarian/vegan for a number of years and am still much more plant based than my ketovore husband.

The other day I was looking at what I had on hand for a snack, I've been allowing myself apples but I have to have protein with them which is usually just some peanut butter or a piece of cheese

But I sliced up the (cosmic crisp) apples into thin slices, put them on a plate and nuked them with pre-grated Mexican cheese mix, sort of like nachos! The apples were barely warm with the cheese melted and were still crisp. For a more savory presentation, some Dijon mustard might be on the plate next time.

Back in my V-days, I would do a Reuben Sandwich, substituting apples for the corned beef but otherwise all the regular ingredients. That was really good and unexpected.
