I usually have a bag of cole slaw and when it's getting a bit old, I make cabbage pancakes. Saute an onion chopped fine and the slaw, let cool a bit when cooked. In a blender mix one egg, about 4 ounces cottage cheese, and then add about 1/4 cup flour and some salt Add the vegs to the batter, fry in olive oil as pancakes. Serve with sour cream and fresh dill. This is what I make for me, it makes about 4 pancakes. You can find the bigger recipe online, I believe they call it cottage cheese pancakes.
